I want you to do me a favor. After you read this post and watch the video below, I want you to go pour test your bartenders and see how many of them are able to accurately pour a 1.5 oz. shot.
You'll be shocked at the inconsistency. Or maybe you won't. Maybe you're fully aware that they have no idea how to free pour which is why you're here so you can have better alcohol control on your bar and liquor inventory.
When I do bartender trainings, I do the same thing with cocktail menu testing. I hand them all a piece of paper with a list of their speciality cocktails and ask them to list how many oz. of each liquor goes into each cocktail. 85% of them fail the test.
This proves how important training is, not only on the customer service side, but on menu knowledge and especially on free pouring, because 1) all of the profits are tied up inside those bottles, and 2) you can't have Sally pouring her own portions into a drink and Greg pouring his version when he makes it or they will taste completely different and inconsistently leads to people not coming back because they never know what they're going to get.
With that said, instead of trying to explain to you via the written paragraph how to free pour, I have a video that shows you how I teach free pouring when I do bartender trainings.
Once you see how it's done, I suggest putting out 4 bucket glasses on the bar so your bartenders can practice pouring 0.5 oz., 1 oz., 1.5 oz. and 2 oz.
Pour each one into the Exacto Pour (or something else that measures oz.) so they can see how accurately they poured and adjust.
